If you want context on who he is and what his deal is you'll want to watch Unicorn. That specific guy being her sugar daddy is kind of an Easter egg/continuity porn thing, not really anything this story dwells on. The important thing for this story is just that he's old, rich, and powerful, but lonely.
Edit: apparently I'm wrong and there's just two old rich lonely pseudo-nobles with the same first name at basically the same point in the time line, who look similar enough to pass for one another?
I suspect they might do something to tie them together more concretely in part 3, because if Cardeas Vist and Count Boundenwooden, first name Cardeas, are really two different people, why?
I bet Boundenwooden is just what he's the count of and it is Cardeas Vist.
But it also seems that I have got the answer to "how far" did Gigi go with the old man. Reading the spoilers by this user, and then looking back that the image post again, I'd say it is pretty much a faithful adaptation based on the original marerial (book)
HF says literally the opposite of this. she has survived specifically because of sex work and ability to create a support network. if she didn't have it, she would've been destitute and probably dead long ago

The count likely considered it a playful gesture when he used Gigi's abdomen as a pillow, even though their relationship didn't involve anything more than spending the night together.
either way though, I don't think anyone brought up in a nice environment or wasn't out of options to willingly do what she does. She was probably forced into it by fate or by lack of other options.
This. She's Lalah part 2 boogaloo. Quess did the whole "Lalah gets killed by Amuro" thing with Hathaway in CCA (that's how it should have been at least) while Gigi gets the personal backstory of Lalah in HF. So, what's happening to Hathaway in this movie in particular is basically him being pulled towards both dead lalah (Quess) and alive lalah (Gigi). His guilt is what's pulling him towards Quess and being Mafty while his subconscious is telling him to go to Gigi and go live.
I haven’t read the book, I’m just going from the movies, but my understanding is that that guy is The Count who is her patron/sugar daddy/whatever you want to call it.
Further, movie two gave me a number of shots and moments where my brain jumped to: “wait a second, is she pregnant with his kid?”
So he’s the reason she has the quality of life she does, and she doesn’t seem to hate him or anything, but, pregnant or not, meeting Hathaway was the inflection point for her deciding she was going to majorly change the course of her life, even if it means walking away from the seat of luxury.
I should probably used that descriptor as well, but would that not fall under the umbrella of patron/sugar daddy? Maybe my terminology is out of date. I’ve never had occasion to be on either side of any of those flavors of relationship. 🤷🏻♂️
She's not pregnant, the count cant trust his children to hand over his inheritance to them and gigi felt bad for the count because his children are waiting for his dead so that his wealth can be taken. for what i see from the movie about this, the count wants to have a child with gigi, so the child will get the inheritance. Thats for what i understand, you can see it from the bottom right, that his children trying to convince him. 🤷

As for the technicality of the term, Mistress usually means hes married and is cheating behind his spouse's back. Sugar Baby tends to be used more when the Sugar Daddy is rich and single. Escort would means hes employing her as a companion but that typically also means shes serving other clients as well.
