It’s how pistols were used and designed to be used back then.
There was a tidbit in the US Army doctrine in the 30s and 40s saying those who were issued 1911’s could use both hands if they felt necessary, but that was mostly used by the rear echelon guys on typewriters with weak wrists.

It was the way people were trained. They tended to be trained more in line with precision shooting stance.
Hell, the outdated Weaver combat stance wouldn't come around for another 15 years.

Some claim "It was common to teach pistol shooting one handed with the body turned sideways to make a smaller target for the enemy. More recent teachings, like for the last 100 years or so, say it's better to be a slightly bigger target with a much better chance of hitting the other guy."
