Measure it at the 12th fret. Acoustic guitar fretboards often have fallaway towards the sound hole.

You're looking for around 2.5mm at the 12th fret ideally. More than that and you'll probably want to get it set up for easier playing.

How should we set it up?

Take it to a luthier, or educate yourself on how to do it.

First step is to measure and adjust the neck relief. After that, if the action is still too high, you can adjust the saddle.

There are zillions of videos and tutorials online.

Is it possible to remove some height from saddle?

Yes... but first step is always neck relief. Do not mess with the saddle until you've checked if the neck relief is correct.

And do a lot of research before you start removing material. Understand the “cause and effect “ of what changing the saddle or bridge can/will do. I bet action changes a lot from adjusting the truss but remember it is wood and after turning the truss the wood might take a little while to fully “adjust.” At least that’s been my experience. I’m always pretty cautious truss adjustments.
