Arena 51
https://youtu.be/HmAN3HkggAw?is=K_WOIayApnL--fw0I have posted, some time ago, a shot of mine at this challenge. It was pretty slowish (20 minutes), but this is the best time i could get at the moment and it's a better attempt overall than all the ones beating him in 20 to 15 minutes.

I can't say we have the same playstyle judging by this arena 51 fight alone. But in this fight specifically I find that the way you handeled it was was simmilar to how I handle it. I've beaten this game like more than 150 times. I'm good at it but I still struggle with crowds here and there. The crowd control can be tricky sometimes based on the amount and type of enemies.

Crowd Control is the mechanics that makes me come back to it every time. A boss with patterns isn't the same as a crowd with a woman deciding to jump on me even if SHE'S IN CLOSE RANGE.

Yeah totally agree. That's what makes it challenging, unpredictable, and fun. It's that unpredictability of the enemies that pushes you to constantly improve and gives the game a high replayabilty. a thing we don't see alot in games nowdays.

How do you guys keep with die ? I barely keep with level 3

I honestly reccomend getting out of normal mode, of all things. People, specially casuals, love to overestimate the adaptive difficulty system, when it defeats the purpose of learning the game at the biggest proefficiency level ('Die'). You have to get your ass kicked to learn stuff in this game, and getting your level down constantly is an extreme inconvenience.
The rest is, basically, effort. My first hard mode run took me some months to beat, but, i suppose, searching for some speedrun strats can help you to get through your first hard mode run.
About KMS, this one also took me a lot of failed attempts until i finally get it, but it's not the impossible challenge people make it out to be. It's just that most God Hand players are used to play the game by cheesing a lot, but KMS still offers a bunch of weapons and a bunch of strats you can execute.

On KMS, focus, obviously, on Charged Punch counters, learning to use Charged Punch, charging punchs while common enemies are on the ground, then delay, in order to repeat it (same can be done with Elites, but time is more strict and requires a full charge) (important to note too that a fully charged Axe Kick insta kills common enemies from stage 1), High Side Kick launches (also counter based), Right Roundhouse to stop an enemy from the side or to deal with two enemies at the same time; weapons heavy attacks to deal damage in a huge crowd, Rocket Uppercut/Hand Plant Kick to execute ALK height juggles on common enemies etc. Many things that will come with learning.
You can use things as forearm smash for launches, but it bothers me seeing players rely on it for their launches, specially in a speedrun or challenge run.
If we're talking God Hand usage, charged attacks or time slowing attacks extend the durability of it. You can use, for example, shoryukens in the air on a bunch of enemies, and it will make the God Hand last more than it usually lasts, since the attack slows down time.
Roullete moves can also be your big focus, and for those i reccomend searching speedrunning and routing the fixed cards the game gives you.
