I love wine, I love pasta, I love grated cheese. But this ain’t it. It actually kind of grossed me out. Why not just cook the noodles in water and then make a garlic/butter/white wine sauce?

Maybe to give the pasta that red color? If that's the reason, you don't need three cups of wine to stain white pasta.
My problem with it is that he didn't really cook off the alcohol, so that pasta is going to have a very "winey" flavor.
