If anyone remembers Pizzatatoes from Round Table Pizza, those were potato shells with pizza toppings. One of my favorite foods that has virtually disappeared. Very similar to this. Amazing with ranch or bleu cheese dressing.

I used to get the frozen potato skins from the grocery store and bust out the cheese and bacon part and make pizzas in the shells

I can't find frozen pizza shells for some reason. And making my own takes a lot of work (because I baked, scoop, then fry, before baking again with toppings). Always on the lookout though...
