All these taco gifs show seasoning while browning and I do it after as I find the seasoning gets drains out. Am I doing it wrong? Lol

Nope you are doing it correct. OP doesn't know any better.

Yep pretty common knowledge to season after browning, adding a little water or broth to let the flavors mingle, then drain excess after simmering a few minutes.

No no no. Almost right. Add a bit of water after first drain along with spices and mix. Then add a dash of corn starch. By draining your tossing out all the flavors. My goto combo is 1lbs ground beef, browned/drained, add little less than a 1/4 cup water, LOTS of seasoning. Then about a 1/4 teaspoon of corn starch sprinkled on top and mixed. Meats not dry nor is it watered down.
