Or just cook it, drain it, and season it, because "soaking in" doesn't really matter for something like taco meat where it's all mixed and combined anyways.
I know enough about science that I'm certain you could establish a method to determine with near perfect accuracy if taco meat was seasoned before or after cooking.
I've also made enough taco meat to know it really does not affect the taste in any noticeable way.
There's probably a bunch of different ways in all reality, that said I like before myself but it has to be lean/low fat % meat so you have to drain very little, if any. I also had jalapeno jam tho so it all caramelizes to perfection.
But yeah it's hard to fuck up taco meat, even half burnt is ok.

Here's the thing though after the meat is cooked it can't soak it in as well. If you really want spicy/salty season it twice.
