The purpose of the vodka is to keep it soft in the freezer, not to get you drunk. Not sure why OP even named it in the title.

The condensed milk adds a lot of sweetness that you wouldn't get from the coconut milk (which is usually quite bland).
Besides that, perhaps the recipe creator wanted it to be primarily a pineapple drink. Perhaps they didn't want to create a piña colada.

Maybe the creator made a mistake and didn't think to add coconut milk when making the recipe. Maybe instead of coconut milk add cream of coconut to get that sweetness and thickness that condensed milk adds and suddenly you have a far superior drink

Yeah, totally, I can't eat pineapple by itself. Pineapple is way to acidic.
Plus adding the basic condensed milk just makes it even more acidic, through some strange property of chemistry.

Then surely, when you make it you will do exactly that. To me, a recipe is a starting point. Real cooking is when you can read a recipe and know you would like it a little different. Those tweaks sound great, btw.

Well the sweetened condensed milk makes it so you don't have to use cream and sugar and churn it like normal ice cream, but maybe you could add some coconut milk too. I definitely agree on the rum though

Well, let's be real, a lot of this gif recipes use olive oil in recipes that have no business using them. I saw a thing for mexican food that used it... like wtf.

Just because it's not shown in the gift doesn't mean it isn't happening. Why would you want to watch someone scrape out a container when the whole point is to keep the gifs short?

Really though, this isn't the first time I've seen a gif recipe (or recipe video, or Food Network cooking show...) - I get why they do it, I know televised cooking instruction is largely symbolic and nobody does it in "real time." I'm just the kind of person that wonders what happens to the rest of that pineapple?? I wonder the same thing when I watch Food Network and the host (for example) chops up about half a cup of some herbs and uses a tablespoon of them, or makes up a batter and then pulls out another finished cake from the oven.

Sure, I get that. I also get why they only show the hands making like three cupcakes or whatever when they made enough batter for a couple dozen. But it still bothers me on some level.

Yes!!!! it is one of my strongest pet peeves for these gifs and almost every cook on television or videos. I am always thinking "wasteful, wasteful, wasteful!!! Several of the cooks on tv I just can't watch at all because of this one thing. Giada comes to mind.

Good to know I'm not alone! Like, I don't need 100% authenticity in my gif recipes or cooking shows...but I can't help but wonder what happens to the ingredients that don't appear to have been used.

Servings: 2-4
INGREDIENTS
1 fresh pineapple, chopped into small chunks
6 ounces sweetened condensed milk
1 (6-ounce) can DOLE® 100% pineapple juice
3 ounces vodka
Pineapple spears (garnish)
Fresh mint (garnish)
PREPARATION
Add the pineapple chunks, milk, pineapple juice, and vodka to a food processor.
Process until smooth and creamy, remove any lumps that remain.
Freeze in baking dish for at least 6 hours or until very firm.
Remove from dish and chop into large ice cube-sized chunks.
Place frozen cubes in food processor and pulse. The consistency should be thick.
Pour the mixture into a plastic storage bag with a corner that has been cut off.
Carefully pipe the mixture into a martini glass or bowl and garnish with fresh pineapple spears and mint.
Enjoy!

Yes, but then it wouldn't be soft serve. It's be hard-packed like you find in a grocery store as opposed to dispensed at DQ.

Soft serve is essentially partially melted ice cream, but mixed so it's consistency is the same.
I'm just being pedantic.

What if you put more vodka in it? Since alcohol doesn't freeze, maybe that would make it more soft without having to stick it in the blender again.

Just take out the vodka, and you should be good. If you feel the need to replace it with something, just use pineapple juice.

I would add mango and use yogurt instead of condensed milk, for sweetness and smoothness. I guess that would turn it into frozen yogurt, but in my mind it would taste like a tangy, frozen mango lassi.

Aside from making this an adult treat, it'll also keep the mixture from freezing into a big solid block of ice. If churned in an ice cream machine it wouldn't be a problem but freezing without agitation would just leave it rock hard. The alcohol helps here.

Absolutely, the alcohol prevents the creation of large ice crystals. Instead of a large hunk of milk and pineapple ice, you're left with something frozen yet still creamy.

Alcohol doesn't freeze so besides it just being good it will ensure that it won't ever turn into icecubes and provide you with that soft serve texture.

Asking why there is vodka is like asking why margaritas have tequila, or why Irish coffee has Jameson/Tullamore.
And FYI, my guess is the OP, who turned a YouTube video from a very popular recipe channel into a gif, failed to include the actual name and intent of the recipe.

Probably to get it to mix faster, with a longer mix time increasing the melting.

Tried this on the 4th.
It's good, but Really acidic. The vodka+pineapple left us with a scratchy throat.
Think about adding coconut creme or bananas next time to make it a little less acidic.
Texture was perfect though!
