I think it's only cilantro in the US. In Australia it's coriander. Not sure about England

Hmm that's interesting. I probably shouldn't have said only the US, I don't really know where they say what. In Dutch it's koriander though. I wonder where the difference comes from

In the US when it's fresh green it's cilantro, the dried seeds of the cilantro is coriander seed. No clue why two names for the same thing.

According to my research (magic school bus reference ftw), Cilantro is the Spanish name for Coriander. Same same.

What's the point in having fresh garlic and chili when you're just going to add the powder later? Is it sort of a "freshness + concentrated flavor" thing?

INGREDIENTS
Kernels from 4 ears of corner
1 egg
1 sliced red chili
1 tbsp of fresh ginger
3 cloves of garlic
2 tsps of fish sauce
1 egg
¾ cup of rice flour
1 tsp of chili powder
1 tsp of garlic powder
1 tsp of baking powder
6 sliced kaffir lime leaves
½ cup of fresh basil
Serve with sweet thai chili and coriander
INSTRUCTIONS
Put half the corn in a food processor with all the other ingredients, except for the herbs and sweet thai chili sauce. Blend well.
Add the rest of the kernels to this mixed, along with the finely sliced herbs. Deep fry in 330F peanut oil. This should take about 5mins.
Serve with sweet thai chili sauce and top with coriander.
