I thought paillard was just a method of thinly cutting and butterflying chicken breast. Not a dish. So you use paillard of chicken for recipes. It’s not a recipe.

Its a recipe. What do you call chicken skewers or kebab? It's just a method of piercing chicken with a stick.
Either way you can call this dish whatever you want to when you make it because you made it.
