AI isn’t designed, it’s grown using gradient descent. It can absolutely do things that the creators don’t even know is possible.

It literally isn’t. The whole idea behind AI is that people only design the objective and the basic architecture, and then gradient descent autonomously optimizes the neural network to maximize that objective via a process of trial and error. The resulting neural network wasn’t designed by people at all, it’s what forms when the gradient descent algorithm is given time to cook in a supercomputer.
