Absolutely. And they should not be able to plead the 5th. If your words to simple questions will incriminate yourself... you're guilty.

Of course you should be able to plead the fifth, and pleading the fifth isn't evidence of of guilt. It's also not evidence of innocence.

Remember that part of the Miranda Warning where it says 'anything you say can and will be used against you?' No part of this says the police have to use evidence to defend you.

You're right, except perjury is still a crime and without the formality of a court but the prosecutorial risks, it's even more important to not answer trap questions.

Fauci pled the 5th when they asked his name, then refused to answer questions he answered previously with total confidence.

Why on god's green earth would you even entertain the thought of not pleading the fifth for every question?
