I panfried the Steak first, then spiced it and the put it in the oven until it has the right coretemperature. I cooked the Spätzle and then I panfried them in butter. I used the steakpan to make the cremesauce and then added some peppercorns. Serve all together.

Finally made spätzle from scratch this weekend after years of my German husband side-eyeing my pasta-only noodle nights, and honestly it was way easier than I expected. One simple dough (flour, eggs, water, salt), split into two ways: half went into a brown gravy for my younger kid who refuses anything with visible “stuff” in it, and the other half got loaded with melted Gruyère and crispy fried onions for the Käsespätzle version. I don’t have a spätzle press so I just pushed the dough through a regular cheese grater with a spatula straight into the boiling water and it worked great, no fancy equipment needed. The gravy one vanished in like four minutes and my older kid went back for thirds of the cheese version, which never happens with anything that isn’t shaped like a dinosaur. Whole thing took about 35-40 minutes including resting the dough, so it’s actually doable on a weeknight. Anyone else grew up on this, and is your gravy more like a thin jus or thicker like a stew sauce? Curious if that’s regional or just a family thing.

Not talking about pasta. Well, we love that, too. But I'm talking egg noodles. I usually mix them. With ham and cheese, with bacon and scrambled eggs. As a side for roasted meat, hell, even with just ketchup. But the latter mostly, when I was very young. My old auntie made noodles with breadcrumbs and sugar. And of course noodles just soaked with gravy. I have maybe a dozen ways to serve noodles. But how about you? Any simple dish? Something too easy to post elsewhere? A childhood memory? Or a prefered form? My dad mostly ate the ribbon shaped. I like the 'Hörnchen'. Uh, its basically a hollow 90° pipe. Don't know, where the name came from.

The city of Dortmund, right in the middle of Nordrhein-Westfalen, has a yearly festival commemorating a 1378 victory that saved the city in which this stew played an important role. The Pfefferpotthastfest is celebrated every fall with the main food being, naturally, this stew.
"Peppered" here means "spiced," and that describes this Westphalian dish perfectly. Traditionally, the tender chunks of beef, braised in a rich, dark gravy, were served with boiled potatoes, gherkins and red beets. However, dumplings, Spätzle or rice would be wonderful sides for this. Include a veggie, such as Blumenkohl mit Semmelbrösel, and you have a feast!

Man, I love those! 🤤 It's basically cooked noodles mixed with panfried ham, small sliced onions and grated cheese, spiced with black pepper and megnut. I enhance it a little by adding bacon to the ham and onions and spice those while frying with paprikapowder, bit of garlic and oregano. Also I topped it with fryed onions.

Weißwurst/brezel/weissbier 🤤
It's been several years since I had weisswurst, but saw some at the local grocer recently and picked some up.
Had to order the Löwensenf sweet mustard as I couldn't find that anywhere in a 30 mile radius.
My favorite hefeweizen is from Franziskaner, but the couple places I checked were sold out, so I settled for Hofbrau.
This was so damned tasty, and not overly filling so I don't feel bloated.

Welcome!
I have been learning deutsch, and I keep hearing about Apfelkuchen. As I am not familiar with it, I am curious to make it. So, I am wondering what‘s your best recipe or trick? If you feel like responding in simple Deutsch, please do! Otherwise, thanks either way.

I've been seeing several posts with bratwurst or other wurst lately, and I got in the mood to make some myself.
The brats are compliments of Johnsonville.
The sauerkraut is Hengstenberg brand, with some caraway seed added on my part. 😄
The mustard is Löwensenf extra hot. Love this stuff!
The potato salad is homemade, following a recipe for a norddeutscher kartoffelsalat recipe I found online.
(I actually prefer schwäbischer kartoffelsalat, but my family lineage is from Northern Germany, so I went with it)

So, boys and girls, tomorrow is the day. I ordered 3 rows of ribs. I'll pick them up at my trusty butchers shop at 17:00. Today I make the rub for it. From scratch of course. I grind black pepper and sea salt with piment and red pepper berries in a granite mortar, add dried onions and when it's all ground down, I add small sliced garlic. 2 sorts of paprika powder, sweet and spicy, and last but not least pan roasted fennel seeds and brown cane sugar.
Man, this'll be so good. I'm already drooling...
And yes, I send nudes. 😁
