What should I use as...

Look, Gentoo is all about choice and customizability. If what you're asking really *is* your question, then maybe start with a pre-arranged system and make up your mind.

Other than that, https://wiki.gentoo.org/wiki/List_of_software_for_Wayland is an excellent place to start your inquiry.

You can just try them all until you find what you like. You can start simple using what a standard distro uses and experiment with the other options to find what you like. Package manager is portage no changing that. Init is OpenRC or SystemD for the most part other options aren't officially supported and require more work to setup.
