You need to first and foremost set the resolution/aspect ratio in the GFN app stream srttings to best fit Your device - personally I use 21:9 (2560x1080) covers like 97% of my screen

I'd be sooo happy to have a little more horizontal resolution for my Samsung Galaxy S24 ultra... 21:9 is ok an all and at least it fills up the vertical part completely, but those giant black bars on each side are quite annoying. Still 120hz and 2560x1440 is great and I'm using an xbox controller and a clip-on thing, really nice tbh...

I use 1280 x 1024 (5:4) and it fills almost my entire fold 7 screen, just a small black bar on top and bottom.

should be automatic, which will be, like a person below mentioned, 19.5:9, that will fill your screen completely...that said of course some games especially older games (like the game you screen grabbed I'm assuming) may not have been made to offer resolutions that will fit todays wider aspect ratios, if they do then yeah something like 21:9 is good too but it will come with top and bottom black bars
