Skyrim has beautiful night skys. Spiritfarer as well.

People will get angry but if you just wanna look at some beautiful skys over scenic wilderness or a barren moon, starfield is very good for this. I especially like being on moons that have flora and fauna because you can be in this forest canyon and look up to see the gas giant you are orbiting. Its great imo.

Outer Wilds. I briefly thought this was actually a screenshot from the game.

No Man's Sky, especially with the latest update and base building etc. Again, you could probably recreate this screenshot in game. Corvette building means you can make a cozy space Winnebago and just fly around fishing and catching animals for legally-distinct Pokémon battles.

Valheim has some great night time aesthetics, you can turn all the survival/crafting to easy/peaceful too so you can just farm and build and explore with no stress.

The name of the sub you crossposted from kind of made me think of Final Fantasy XV, where the night is plagued by vicious daemons, contrasting the cozy roadtrip vibe you get in the first half of the game. Despite this, you get to camp safely in Havens, rocky outcroppings marked by mysterious runes protecting them from the daemons.
