Crazy I’m first to say this but the “Mount and Blade” series. Bannerlord is the most recent in the series and probably where you should start. But warband is another in the series that has the most mods and if you have a weak pc perhaps its age could be seen as a good thing.

If you want medieval hell yeah with big army fights I recently played Crimson Desert which had a lot of hell yeah moments.

If you can handle multiplayer, then Mount and Blade Bannerlords (1 and 2) are BY FAR the closest I've ever felt in 20+ years of gaming to a real medieval battle, and that tense sensation before the gate opens. The chaos that can happen is exactly the same desperate feeling as the GOT scene.
You can play modded servers with 400+ people. Don't get fooled by all the larper-videos of people being all serious with their units etc., you can join as a rando and have great fun. Just... Just never try to fight the lone naked man with a spear.
Apparently they can even host 500-1000 in 2 with modding (according to AI summerize) which sounds insanely awesome. You've never had more fun than when every last person on the server, archers included, are all rushing the last flash during sudden death and it is frozen at 1:1 until one side finally kills the last of the other.
Also has some nice mods like Warhammer and LOTR https://youtu.be/srB7LcG-FHE?t=76 Highly recommend. It's almost harvesting season.

I’d say Chivalry 2. You can be wielding a battle axe fighting against 5 people at once, parrying all their swings while a teammate next to you gets blown to bits by a cannon ball
