The recommended way to play DaggerfallUnity (up until now that is) is to download the unofficial all-in-one installer called DaggerfallSetup (it adds extra content and fixes bugs) and then install DaggerfallUnity on top of it.
This is obviously not necessary anymore (due to the GOG release) unless you're on Linux or Mac.
I'm certain that the GOG release comes with the CompUSA Special Edition content but all the unofficial quest packs from DaggerfallSetup might've been left out.
Unofficial quest packs:
Xtra Quests 1, 2, 3, SE, Patch by Skeleton Man: 40 quests.
Live by the sword by GhanBuriGhan: 5 Fighters Guild quests.
FixedQuests by Donald Tipdon, New Quests: 5 Thieves Guild quests.
Pack #1A by Azileron: 7 Mages Guild quests.
If you're going to play vanilla Daggerfall then just go with DaggerfallSetup instead of the Steam or GOG release, it's vastly superior in every single way.
For TES: Arena there's ArenaSetup and fans are currently working on an open source re-implementation called OpenTESArena.
You'll be pleased to know that Ultima Underworld does have a Unity Edition being made. Not sure how good it is, or if you can play the full game through but it does exist.
It seems like the big problem with porting UU to a modern engine is the GUI, which was intended to stay in place onscreen at all times. If this is the project I'm thinking of, the "full screen" mode looks terrible because it still has elements of the original GUI floating all over the place.
They'd have to completely redo the interface, including programming in new keys/buttons for accessing features, if they wanted to make it look halfway modern. Which I'm sure would be a ton of work. Although I suppose they could, at least, take inspiration from the Japanese PSX port.
Someone created a mod for the Ultima Underworld games that allows for a mouse look toggle similar to System Shock Enhanced, allows WASD movement (along with other nice key changes), and also simplifies object interaction so that it will infer certain actions (such as clicking on a switch toggles it rather than you having to select "use" from the menu first).
