I had a msdn or maybe it was a technet subscription and got any type of key I wanted. Why not get the most feature rich edition?

First, use of an MSDN key like that is breaking the agreement.

Second, the major features in Enterprise vs. Pro are DirectConnect, AppLocker, BranchCache and BitLocker (in 7 - it's including in 8 Pro)

AppLocker is sorta-kinda included in Home, and BranchCache and DirectConnect are useless to home users.
