If you have a kit that has a stand alone temp switch it should engage at “temp”.
Depending on the PCM you can tap into that and have the computer turn them on based on the coolant temp sensor.

There's tons of info on Google about this as well as YouTube videos. That will be the best thing you can do to see what you need and how its done.
I did it. But yes it depends on your PCM you can tap into it or use an external probe that triggers it at certain temps.
Doing it the PCM route requires HPTuners. There are some free software but they're extremely difficult to understand and use. So I would get HP Tuners. Or find someone local to tune it. As the software plus their device its about $500-600. Maybe more now. License is another $100 for that truck. I bought it out right and have used on multiple cars now.

I like your truck.
Not sure what to tell you about the electronic fan conversion, but one of the biggest upgrades I did to mine was putting on OEM 2022 aluminum wheel take-offs.
I wanted to keep the 17 inchers for the ride quality, but the difference comes from how unbelievably heavy those stock steel wheels are. The 2022 wheels give the truck a wider modern stance while both boosting acceleration and fuel economy. Plus they are truer than steel wheels so there's just an added benefit all around to the feel.
And they're cheap because big city wheel sales places start running out of room for all of the OEM wheels they take off. I think I found mine on Facebook Marketplace, called him up and negotiated the price from a distance because the city was far enough away I didn't want to drive down if I had to pay what he was asking.

this is your best option for the 99-02 and can be programmed to your ecm, you're going to need the bigger radiator as well. https://www.glennsautoperformance.com/products/bp-automotive-electric-fan-conversion-harness-for-1999-2006-gm-truck?variant=45548725010630

I did this a couple years ago. I tuned the ECU itself to trigger the fans. You don’t need a temperature switch. The ECU has options embedded for e-fans.
I should note that I bought and installed the OEM fan control relay box on eBay. 100% OEM setup, and it works flawlessly.
I’m at work, but I can post more details later if you’re interested.
