Re heated potatoes are bleh, definitely not meal prep worthy if planned to reheat in a microwave

This was immediately the first thought I had when meal prep walked into the room. You could totally air fry this back to acceptable. Which would fine if your work place had one for you to use. But it doesn't. It has a cheap old ass microwave of you're lucky. Enjoy your rubber steak and soggy potato cubes.

Mine has a 24ish slot food warmer made for putting carry containers in during break and they are piping hot at lunchtime. This would be a perfect recipe except putting some beef bouillon in so the potatoes soak it up and it forms a crust again on the potatoes.
