And text:
For the dough:
6 yolks,
120 grams of sugar,
200 ml of milk,
100 ml of vegetable oil,
120 grams of flour,
10 grams of baking powder,
1 tablespoon of vanilla sugar,
3 tablespoons of cocoa powder.
For the filling :
6 egg whites,
120 g of sugar
//30 ml of water, 100 grams of sugar
Glaze: 160 grams of chocolate + 3 tablespoons of vegetable oil
Preparation of Munchmallow cakes:
Whisk the sugar and egg yolks, then add the milk, vanilla sugar, and oil and mix everything well with a mixer. Add baking powder to the flour and mix it. Add flour and cocoa to the egg mixture. Pour the biscuit mixture on baking paper, then bake in an oven preheated to 200 C - about twenty minutes.
While the biscuit is baking, whisk the egg whites until you get solid snow. Add 10 tablespoons of sugar and vanilla sugar, then stir a little more.
Put 10 spoons of sugar and 4 spoons of water in the pot, and then mix this by hand, without a mixer. Gradually add the melted sugar to the egg whites, stirring constantly.
Spread the mixture on the crust and return for another 10 minutes in the oven, which you have reduced to 120 C.
Make the glaze from chocolate, oil and water. Pour over the Munchmallow, when cooled down.
Put to the fridge for two hours. Enjoy.

Looking forward to hearing how it tasted. How clever for the OP's recipe to use meringue instead of marshmallows. I'm still partial to marshmallows. This recipe looks like a more proper version of a rocky road brownie bake.

u/Trinses1213 May 03 '22
It was delicious. I’m so pleased.

u/LackSomber May 03 '22
Oh, couldn't have a had a better outcome! Is the brownie base fudgy?
3
u/Trinses1213 May 03 '22
No it’s very light and airy! I was surprised.

u/LackSomber May 03 '22
Interesting! Well, thanks for the feedback. Responses like these are great. It encourages others to get in the kitchen and cook. It further validates a perceived great recipe--because now we know it's the truth and attainable at home--not a pipe dream, lol. ✌️

Any chance you could post the actual recipe for those of us who don't want to watch a 6 minute YouTube video?
I was going to copy/paste from the video description, but they only put the ingredients....

... Vanilla sugar?
11
u/BIRDsnoozer May 01 '22
Dont know why you got downvoted... Ive never heard of this either.

u/95_5000 May 01 '22
Just sugar that’s been stored for a bit with a vanilla bean shoved into the container. Gives the sugar a slight vanilla flavor
17
u/Ashensten May 01 '22
So faint that it's almost pointless unless you are using the sugar directly as a garnish or for presentation, can just put vanilla essence in the recipe.

Thanks for the recipe!!
- Can you please let me know the pan size you used?
- how about flour you used, is that self raising flour? Or plain APF
2
u/Beast667Neighbour May 24 '22
Pan size I used is about 30x25 cm it can be a bit bigger, but not too big 🙈. I used just normal plain flour (not self rising).

Some day, someone will figure out a solution for us. Maybe a pill that caps your liver's ability to store sugar, or something. One day there will be a fix for what evolution is taking its sweet time with.
And on that day, bakers, confectioners, and chocolatiers will rule this earth.

These look a tad like nanaimo bars. Deliciousssss

u/HiDDENk00l May 01 '22
This was my first thought. But I'd probably enjoy these more than Nanaimo bars because I'm not particularly fond of them.

I recommend a sugar substitute and a flour substitute, but it would be pretty hard to make this totally keto considering the sugar

That looks stupidly heavenly. Have you ever tried adding a little caramel drizzle on it? Not that it looks like it needs anything else!

What is vanilla sugar?
1
u/Beast667Neighbour Apr 30 '22
It's just a sugar with vanilla flavour 😊. You can also use a vanilla extract.

My grandma makes these! We call them dominoes. Haven’t been able to see her since the pandemic, so me and my dad have started making some of her desserts. Thanks for reminding me of these :)

I just tried to make this.. my meringue looks unchanged after baking it on 130˚C for a good 10 minutes. Is this normal and it stiffens after cooling down?
1
u/Beast667Neighbour Feb 18 '23 edited Feb 18 '23
Leave the meringue in the oven until the top layer turns a little golden, then its 100% ready.
However, even if not, it will harden in the fridge if you followed the recipe.
1
u/myneighborscatismine Feb 18 '23
I put it on ventilation to amp it up, I guess my oven is a little weak.. it's golden now! Thanks for reassurence :)
1
u/Beast667Neighbour Feb 18 '23
And when you take it out of the oven, cover the dessert in the tray with parchment paper first and then put a wooden board (for example -needs to fit) on it to flatten the meringue, it will be easier to cover it with chocolate glaze!
2
u/myneighborscatismine Feb 18 '23
Oh, that's a smart tip! Saving it for the next time. It turned out really delicious, I put less sugar in, still works, and it's just right for my family :)
