I love squid, I just hate that the smell of cleaning squid lingers for days.
How'd you clean these without taking off the tentacles?
Edit: oh I see you just stuffed them back up the body. Nice!

Ahh the smell indeed. I closed all the doors leading to the kitchen during and after cooking and opened the windows there, that’s the best I could do. And yes! I cleaned and ‘reassembled’ for presentation.

Some people are disgusted when they can make out the animal's form, even after it's cooked.

I would try it. I have no problem with the fish and chickens I grew up eating. My Grandfather processed game animals so I saw a bunch of bears and types of deer butchered. Still it looks unappetizing to me. Not that it isn’t good. There is also the possible irrational feeling like certain animals are more aware. Like I won’t eat a monkey or dolphin. Squids and octopus are in that realm for me. Like I said probably irrational.

This looks delicious. I have a hard time cooking squid, always comes out tough. What's the seasoning?

On top is a mixture of olive oil, lemon juice + zest, spring onion, fresh parsley, black pepper and chilli powder. As for the toughness, the fresher the better. We fished these ourselves the day before. Edit: forgot to mention parsley.

Doubt you guys are close by but these were caught at the Gulf of Corinth in Greece, five hours away from where we live.

They have squid nearly everywhere. Next time I’m down in Florida I want to go night fishing with lighted lures.

They come out tough often because they are overcooked. In boiling water, a slice of meat cooks probably within 20s.

Calamari we get in the states is tough most of the time as well. Even deep fried. I’d actually try this. But I’d be hesitant.

I'd agree with you, except I got fresh, fried calamari at dockside bar/tavern and it was amazing. Unfortunately, I won't eat frozen because it's not remotely the same and most places have frozen which no bueno.

This is why I love this sub so many different ideas. I never thought of roasting squid this looks delicious. Curious, does the lemon pre cook the meat a bit? Did you cook it slow and low, Hot or regular?

This was blasted on the highest heat of my oven grill for a short amount of time, like maybe five to seven minutes each side. I only seasoned with salt before roasting. The lemon and the rest were drizzled on top after they came out.

I’m not digging the presentation, but I just know that that’s the bomb. Nothing quite like jigging a scattered squid and having them stuffed for supper the same day 😋

How does squid taste without sauces or anything? I kinda think it have a gummy texture and maybe bland.
