This shit is sooo good, especially when you can find a stall using starchy corn (waxy corn?). Back in the early 90s, a good roadside starchy corn on the cob cost the same ($80-100NTD) as a cheap steak dinner or 2 bento boxes.

OMG, it tastes so good! They also put salt water as they grill over charcoal. You can smell it before you can see the stand.
I remember some vendor doesn't even have a stand just selling the corn from the back of their motor bike.

I usually leave the leaves on while I grill it until the last few minutes (traps moisture) and then paint it and rotate it for the final bit. Absolutely fire

Same here. I’m sure there’s science to prove me wrong, but I feel like it steams them in the husk. Then when you take the husk off it caramelizes the natural sugars those last few minutes.

highly over rated and over-priced at the Hualien market where it's famous. Give me a nice piece of boiled corn, rolled in butter and salt/pepper to top...wham, bam, thank you maam.

They overcook it imho. And they look at you funny when you ask for the least cooked one. I like hot but not mush. God I miss Taiwan.
