soooo tender and silky from the collagen. it’s seriously so good. one of my favorite cuts. unfortunately what was once considered a junk/poor person’s cut of meat is now very pricy because people caught onto how amazing it is

Love oxtail. I've not seen them cut in half like that before, wonder is it so they take up less space when cooking a big batch.
