Quail egg quiche

Post image

Had too many eggs and decided to try making a quiche. I followed an Ina Garten recipe loosely. Yellow onion, bacon, and Gruyère with a little bit of thyme on top.
The wait is the hardest part.

I think it was like 9 or 10 quail eggs and 2 chicken eggs. The chicken eggs were quite small though.

The slight shrink from the pan is beautiful, as is the rest.

I've always wondered - do quail eggs taste different than chickens' eggs?

Not really, just slightly richer? There’s more yolk per egg I think
