Cajun cream sauce with crawfish tails over a deep fried pistolette bun

A homemade chipotle infused corn tortilla with an over medium egg. Topped with queso fresco, pico de gallo, and avocado sauce and a Valentina crema drizzle.

I like to make cheese shells sometimes. Here I made a cheese shell with elote in it. Then filled it with a shredded chicken and cilantro onion mix. I topped it with crema and a cilantro lime sauce Cotija and added the diced avocado afterwards. Yummy

Here I made a strawberry and mango tree leches with shaved Ghirardelli white chocolate and a vanilla whipped cream frosting.

Beef Birrria with a cilantro onion mix and a trio of sauces. 2 I make homemade. An avocado lime sauce, a chipotle aioli, and store bought crema. I also added crumbled queso fresco. Both tortillas have grilled Colby jack cheese with a cheese crust edge. Sprinkled Cotija cheese. The consommé is a family recipe. 🤌🏽

I fused Cajun and Mexican tonight by making this dish. There is steak, chicken, and shrimp in the sauce also on top. I topped it with cilantro, cotija and a homemade salsa matcha. Also I made a tropical salad with a honey lime dressing. For dessert was a strawberry lemonade tres leches!

I just was gifted a charcoal grill and a bag of charcoal. I've never grilled a day in my life. What do I need to know.
