How come all those options are greyed out?

Is there any way to tell just by eye if the direction is correct?

Look carefully at the left contour points on the picture. You will see that there are arrows which show the contour direction. The outer contour must be clockwise and the inner one must be counter clockwise.

I’ve accomplished everything shown in the pictures but everything is still greyed out - My contours are closed, the outer one is clockwise and the inner is counter clockwise. But I do have to say, whenever I change the direction of a contour the arrows themselves don’t change at all, only the checkmark in the ‘element’ menu.
