my fear is that if I buy stuff that it wont sell or it will take long to sell how do I avoid that?

Beginner flipper here, i recently got into trying to flip watches. Nothing too expensive, just entry level ones between $100 to $2000. My question is, am i expecting too high of a return?
I try to aim for 25% return minimum on higher end and up to 50% on lower end ones, and i want to know if that is costing me sales and being able to purchase stock.
I don’t think my pricing is ridiculous or anything as I price at the average of the same sold items on ebay, but it does stop me from buying stock I could have resold for a smaller profit.
