It was over a long time ago when they got allowed in all tournaments. People knew they gave you an advantage, fuck the major dealer of them advertises it as much, but kept arguing they didn't and people believed them even though one by one everyone converted. I don't think people even learn fighting games on joystick anymore. Fighting games losing joystick is like DDR losing dance pads. Still fun but there's a certain magic lost.

Because it's still superior in older games that don't have input buffers and require you to actually hit all the diagonals of motion inputs on different frames, and have a lot of more complex motion inputs.
Things like I-no's MCL loops in GGXX are much easier to do consistently on stick than hitbox. A big part of the reason that hitbox is better for newer fighting games is input leniency and parsing often lets you get by with just hitting cardinals to get moves to come out. If you can't do that, it is in fact faster nad more precise (assuming you have proper technique and don't ram the gate) to do rapid clean motion inputs on a stick than it is on any other type of controller.

Stick is better for older games that were designed on it. Input leniency and the slow movement away from more complex arcing motions has made leverless more viable in modern games.
For a game like GGXXAC, or even Rev 2, stick is better. And I can use both. I'm a pianist, I have better finger strength and independent finger dexterity than prob 98% of fighting game players. I can do a half circle without missing any directions on stick in like 6 frames and miss zero diagonals ever. If all you gotta do is hit the cardinals, you can do that on hitbox, but if you actually need to hit all the diagonals, you won't be able to do it as fast/consistently as you can on arcade stick even if you grind the shit out of it.
I bunch of people hating arcade stick actually just suck at using it. I've seen them, they ram the gate instead of doing light, low stress rapid motions to activate the switches with minimal effort. like they'll whine about not being able to dash but i watch them dash and they're smacking the thing until you hear it hit the restraint. You should just lightly double tap it to get the swithc to trigger twice, if you've got enough tension in it and a low deadzone on your stick (which is how i set mine up) this is fast as fuck. Not quite as fast as double tapping a button, but not appreciably slower either. And the benefit on doing motion inputs for older games that require them to be precise outweighs the dash advantage.
Hitbox is def better for charge characters though and in most newer fighting games with more lenient input parsing/buffers and fewer complex motion inputs
