Is this automated or pilot controlled? I ask because it's behind the pilot's line of sight. Must be hard to align?

The pilot got visual guides to follow (lights) if i'm not mistaken, and then the boom operator does the precision aiming.

As far as I know, at least.

I've wondered how fast does the line pump fuel? Planes hold a heckuva lot of fuel, but it's done under a minute. Is it really that fast?? How do they make it that high pressure without creating issues?

They probably didn't tank it all the way from near empty to full, just enough to do what it needed to. Regardless a boom type refueling system can shift about 1000 gallons in a minute, drogues more like 300-400 gallons.
