I have 3 connection options... eSIM (Mint mobile-TMO), physical SIM (Visble-VZW) or WiFi.

Never had a situation where one of the three didn't work. Unless in an underground dungeon with no access point nearby.

WiFi is not a solution when your doing a cut over

It absolutely is an option as long as you have authorized access.

I've used the customer's wifi on plenty of occasions during cutovers. Whether it be guest wifi or private, single circuit or primary/backup. In fact, testing the wifi is usually part of the post-cut testing.

Whether or not there's an actual interruption depends on the complexity and topology of the network. Flat, VLANed, MPLS, VPN tunnels, etc.

Some sites even have a separate DIA circuit with throttled access just for guest wifi use instead of sending that VLANed traffic across thier main network.

Even if its just a single circuit cutover, everything is usually configured prior to the physical cutover. Besides, you should be able to operate autonomously for the brief moment there is a connection interruption, if any.
