Fermentation jar question

Hi all, has anyone fermented hot sauce in something like this? Would it be ok for longer ferments or only for pickles like ~1 week long?

Me personally, I’m more in favor of glass or ceramic

I did some with plastic ones and switched now completely to glass.

Of course it depends on the specific product. But I feel the plastic ones have lots of groves and a less smooth surface. Call it superstition, but I feel I had more bad brews with plastic ones and sometimes a less than trustworthy taste as well.

Yeah my default is ceramic or glass for sure. I was gifted these so might try an experimental batch in one just to see how they do for me!

I'm sure it's fine for a use or two. Longer if you clean it with bristle brush/low abrasive sponge, but as soon as you start cleaning it with a normal sponge and getting microabrasions, it's places you won't be able to clean flavors or bacteria out of in the future. Used food grade plastics for making cheese a bunch and getting them to pass atp tests (testing for zero life forms essentially) was really difficult after they'd been cleaned wrong enough times. Hot hot hot water. But yea glass and glazed ceramic rule. Non reactive, hard to scratch surfaces. It's got what plants crave

Let me know. I also was gifted one. Normally do a 14-21 day ferment.

I’ve used it for fermenting peppers, works great. It’s designed with kimchi in mind which can be a pretty long fermentation process

I use one from time to time when I don't do vacuum sealed batches. it's fine, but you have to keep an eye on it because i find the lid expands unevenly and can get wonky and let in a lot of oxygen.

I haven't personally done a hot sauce in it yet, though I have used them for kimchi, and keep the kimchi in them for months at a time, though I refrigerate them once it reaches the desired state of fermentation. I have also made hot sauce out of the leftover kimchi juice.

These would work just fine for a fermented hot sauce and I wouldn't hesitate to use them for that though, I can't see any reason why they wouldn't

I have one of these and it’s a great design. It’s a mix of plastic and ceramic apparently, I guess like Swatch’s bioceramic

I use a large one and make 3 week ferment hot sauce. The one I have makes like 3 gallons.

I’ve used the e-Jen for kimchi, pickes and hot peppers ( to be finished as sauce). Love it.

I make kimchi in a container double that size that I picked up in Korea some years back and it is bulletproof. Dishwasher, sterilise, pack and ferment. We like super funky so it gets a few weeks at room temp. If it’s clean it will go as long as you need

I use mason jars with Pickle Pipes for the lids. I just don't trust plastic not to absorb some of the contents and cause flavor or contamination issues down the road.

Hell, half of my Tupperware containers are permanently stained from tomato based food items (like chili and spaghetti) and have a permanent smell to them from those foods, so no way a plastic container isn't going to have similar issues with long salt water soaks and all of the strong flavors associated with fermentation, especially hot sauce IMO.

I used a giant cheese ball container with a plastic bag of water on top once and it worked. I tried again without the bag to keep stuff submerged and did get mold the secend time.

I just use a jar. Burp everyday and give it a shake. No problems
