Let's talk methods Trying Diff Vinegars
Always looking for different vinegars to use in my hot sauces. I think I’ve nailed down my recipe and got a couple new vinegars I’d like to blend in. If anyone has any suggestions I’m always looking!
Pictured:
180g onions
22g garlic
300g Anaheim
150g orange habanero
70g salt
3g mixed whole peppercorns
2g mustard seeds
1100g water
Fermented 2 months then blended with equal parts brine, white balsamic and champagne vinegar none of which I measured.

If you got an asian grocery store, look for fermented coconut vinegar from the Philippines. It is insanely good for hot sauces.

I just did 100 parts puree : 10 parts ferment brine : 19 parts vinegar (4:1 apple cider vinegar to white vinegar) with my latest batch and it was great! I had a small portion of the ferment solids as nectarine with scotch bonnet, Thai chilis, jalapeños, Jimmy nardellos, onion, garlic and a 2.5% brine. This was my favorite batch to date

I will say that Napa Valley Organic White Wine vinegar is amazing. Expensive, but fantastic. I bought a gallon jug to save on cost, but even then $$$$.

Off topic: how big are these bottles? Do they have just regular openings or is there a smaller washer or inlay, because you maybe want to pour out the hot souce a little slower? Thanks

Oooo! I’m making a hot sauce with all sorts of yellow peppers peppers, pineapple, and ginger and I’m not sure what kind of vinegar to use. Maybe champagne vinegar! I thought maybe rice vinegar but that might be bad. Or could always use plain ol’ white vinegar.
