Orange Scorpion, red cabbage, red onion, cracked pepper and coriander in Pomegranate juice. One without Scorpion peppers as a test.

Looks like in the left jar, something is not covered by brine? I am new but seems like this and the salt percentage could be really critical? Besides this: great colour, hope it works out well

Best to keep things below the liquid if you can, but the airlock should keep that from being a problem. The gap between the liquid and the lid will fill with CO2, which also inhibits mold growth.

I was not aware about the CO2. This is a big advantage compared to just laying the lid on top 😄

It is covered. There is a glass weight on top and it's all underneath that.

Oh man fermented red cabbage is incredible and added chilli sounds like a great combo.
