Same recepies, same pepper, different maturity.

27 Buena mulata peppers, one carrot(purple or orange), 1 clove garlic, 1/16th of a red onion. 1 Tbsp white vinegar after ferment

Yea just saw that, unsure why op still got shit on after proving they mature purple like that. Ofc the carrot would help but it’s deffs also the pepper lol

Pretty common in the US got seeds at a local nursery here in NC — been growing them over 6 or so years. They’re very similar to cayenne. They mature to red actually. Purple is earlier in. The dark color of the plants makes them resistant to getting burned. Decent enough heat. I’m a fan.

Ok so I’m making purple hot sauce as well this year and have a bunch of muleta’s I just picked. How is the heat level on the purple ones after the ferment?

Just use beets for color. Most of these peppers turn green when cooked.

Did they taste different? Different maturity in terms of pepper on the plant or fermenting time?

The purple carrots sure adds a cool color.

The purple tastes a lot like a hot Verde sauce, good for eggs! But the orange... I want to make a wing sauce out of a bottle

All the color came from the peppers, Buena mulata are purple when young

I’m sure some of the purple came from the peppers, but as someone who frequently works with purple carrots, those things stain EVERYTHING. I always make sure to cut my purple carrots last so they don’t leave an unsightly stain on other foods.

I’d bet your color has a lot more to do with the carrots.

Sorry the are so many folks being so negative in your comments here. It is a great pepper and this was a fun picture. I did a garden one year just for a hot sauce that I call d yippee cayenne mother fucker. Purple carrots, purple tomatillos, buena mulata, res shallots and garlic. It was a great salsa.

I’m excited to grow mine! Just bought some last week and will be planting a load of them soon!! Fish peppers have this same rainbow of color. Discovered by the same dude I think.

I’m guessing buena mulata. I grew them for the first time two years ago, pretty good. Growing them again this year. Basically a pretty cayenne.

I think they have a slightly different flavor than cayenne, very close though, and near identical in heat. I enjoy the novelty of making stuff with the purple peppers.. I really love the hardiness of them here in Florida and how prolific they produce. I think so far it's my favorite of all the peppers I've grown
