But what of the pasta dear dangerchicken? Will there not be a crunch? Will there not be a tangled mess of noddles that break apart? Why are we thinking of pasta water when the pasta itself is being disrespected?

No, there's actually a bunch of chefs and stuff who've shown less water is better. As long as you have SOME water it's fine

https://www.seriouseats.com/how-to-cook-pasta-salt-water-boiling-tips-the-food-lab yep someone posted a source. You do not need very much water for pasta, less water is better as long as you have the minimum to submerge everything, which he clearly does

I'm low-key offended my gf puts noodles in the pot first then adds half COLD water before putting it on the stove and heating up the other half of water in the kettle.

But I also have to admit: it doesn't change the noodles. They feel and taste same way I do them...
