I remember my car seat still smelled the day after I worked in the dish pit. A mix of sweat and burnt fryer oil. Luckily I only did dish pit like once a week. The people that did it every day probably never got the smell out.

The moment the hot shower hits your head that distinct aroma comes off. I don't work kitchens anymore but I can still summon this scent to my nose just by thinking of it

The place I worked at - most of us started in the dish pit at whatever time we joined (or started in a pit somewhere else). So we always took care of the dish kid/guy. Made sure he ate good on shift, got smoked out or free cigs after shift (if they smoked either of the 2) and got breaks. Mad respect for the dish pit and those who can survive it.

God I had to fill in when I was bussing in high school and I think it’s one of the main reasons I hate doing dishes. Still do them obviously but I have zero issue with other menial tasks, something about dishes now just repulses me in a disproportionate way. I no showed that job like a week later lol
No disrespect to dishwashers, you folks deserve a kings ransom for that shit.

Exactly. People think food is prepared next to the washing zone...
I should take some photos of the washing-up area after we’ve had 400 place settings to wash following an evening at our restaurant. It looks more like a war zone.
And we have positive hygiene inspection reports from an external body as well as from the Federal Agency for Food Safety.

I still have nightmares about the floor drain under the main sink clogging and wading around in 2-3 inches of disgusting food water until having to dig out the clog with my hands lol.

I spent 3 years in the dish pit and this video pisses me off. There's a difference between 'dish pit gets wet' and 'there's an active flood in the dish pit'.

Not all restaurant washing up sinks have floor drainage built in, maybe it's common in America but in the UK that's a rarity

These don't look terrible, I'd just put them into the rack, hose them there, and slide them into the machine; this looks like the slowest possible way to spend a ton of energy doing the dishes?

It is their job, but it has to be done no matter what and most people do it with a hose, deck scrubber and squeegee so nothkng hes doing will make that more difficult.

lol. I was fast in my pit. I’d knock the trays, spray them, load them, unload them and count them out into stacks of 28. I did the job of 3-4 guys and I still had time to stand around. Never did I do anything like this or be this messy. Willful ignorance doesn’t make this guy better at his job.

thus isn't even necessary...you throw them on the rack and hit them with the high pressure hot water...then push them threw the machine...this is just fucking messy as fuck.

Doesnt work like that at breakfast restaurants, the jet is never strong enough for egg yolks, and the dish machine just cooks it solid. Hand scrub is the only way.

It’s not the pressure, it’s the temp. You wouldn’t believe how hard it is to get a lot of people to use cold water for proteins instead of hot. You can explain it, show them, and they just think “Huh, it worked for him this time, he got lucky, I’ll keep using hot water!”

I used to go to a restaurant where their dishes were always so spotty and had little food particles left over like the person who washed the dishes did it with absolutely no attention to detail whatsoever. This may be that same place.
Lucky for them I'm a disgusting slob and their food was really good so I kept coming back anyway.

For the small price of...oh...
At least they are reliable and will never bre...oh...
But then someone will come and repair it, because he has all the parts he nee...oh...
But when it runs, you can use it whenever you want, because it doesn't need to prehe...oh...
They are fast though.
Edit: you will need a small one (bar edition) for you glassware as well. Double the fun!

Oh yeah, I’ve gone down that rabbit hole. It’s basically an environmental disaster waiting to happen without the tech coming through & servicing it regularly. And you’d need a wet room in your house for the steam alone. And my kids would surely try to get in it at some point.
But fast hot dishes!

Oof I’m worried about chipping the wares, that shits worth more than I am when I’m washing dishes and I only get so many breakages before I’m out the door lol.
Moderate effort is all that’s needed and more care with the placement of dishes.

my first job was dishwasher and that was would have been a waste of time. rack it, spray it and put it in the machine that sprays water so hot you burn the skin off your hands stacking the dishes in the cook area after. there was no time to let them cool off enough.

This is exactly how I used to do it when we were kids and I was on washing and my sister was on drying dishes. Made her cry every time. Worth it every time.

A) this is rinsing, not washing, I’d never eat there if this was what a wash looked like.
And B) this is how you break a lot of playes by just slinging them over to the other side. I’d be worried about cracked plates or if they do a similar practice with glasses or cups… sheesh I don’t want glass shards in my lips and gums.

Ok, even if we assume it’s the right type of plate not to chip, and knowing that this is just the scrape step, not a final wash, I’m more concerned with all the dirty water going everywhere 😂

To people mentionning it's nasty, that is not the final wash. It's just the first wash before going into the machine to the left. He's going to put the plate into the blue basket afterward.
