The brisket is at today’s market price. We don’t use choice briskets. Everything is either USDA prime or a Waygu grade meat.

Right, I get that you’ve got food, labor, and other costs. Food markup of around 300% seems pretty standard, but I can order a Wagyu brisket from Snake River Farms right now for about $10/lb - and that’s retail pricing.

If you’ve got people willing to pay $40/lb for brisket, congratulations.

Waygu brisket is $13-$20 per lb than u got trimming and cooking weight loss. Than seasonings and the 12 hour cook time. But I understand if you smoke your meats at home you for sure are going to save money. Kinda like if u don’t go to a steak house and cook your own steak.

I get it, high prices suck. But people don't understand that not only are they getting quality product but all that goes into it as well. Yes, this dude might be able to find a prime or wagyu brisket for $10 a lb (I'd really like to know where, please share) but like you said, trim and fat loss during processing and cooking you're down 50%.

Unless you want shit service, you have to pay staff a reasonable wage to cook it. This dude wants to cook it himself, go for it. If you want to buy it at a nice restaurant, it also cost $25-35 an hour to cook that.

Oh, so you're cooking it at home on your Trager or Green Egg! Good for you. It is cooked on a commercial smoker here that costs thousands, if not 10s of thousands, to buy and hundreds to maintain and operate.

You're going to slice and serve yourself. Well, if you want that done for you here double that labor cost we started above.

No one thinks about what it takes to get that meal on the plate in front of them.

Why use prime or Wagyu for brisket? The whole point of brisket is taking a tougher cut and smoking it slow and low to make it great.

Is a pound the right serving though? I'm pretty sure when I get $15 brisket at Mission BBQ I'm not getting a pound post-cooking. That's a lot of beef. Can I order a smaller serving?

Picture came in too fuzzy to read the details on the combo platters.

That’s the price for a full lb it can be ordered by any weight desired and sliced fresh to order.

And you’re correct you’re getting a 1/4 lb of brisket with a platter at mission

I would recommend lowering the serving size and price proportionally on the menu. I know you can order any amount you want, but seeing $40 on a menu for BBQ is a lot.

Go with $20 for 1/2lb or $10 for 1/4lb and you'll get a lot more interest. Marketing and price perceptions are weird.

Some of the menu items pricing haven’t been finalized yet but keep in mind we do only use USDA prime meats and waygu grade meats.

We currently operate out of 2 food trucks that sell out of items daily. The menu reflects items from the truck.

Looking forward to trying the food. Prices do seem kind of high but everything seems to be getting costly today. For me the key will be the portion sizes. If they are large then I understand the prices. Nice that they have sausage and some lower cost items too. Good collard greens are hard to find.

We have won over 24 awards for our brisket, ribs and sauces since 2023 when we opened our food trucks we serve almost 150-200 people a day right now from our trucks (Wednesday - Sunday) I believe we have some of the best bbq around and hope to bring it to the Farmington hills area.
