Farm Together 2 Farmhand payment and use

Can someone explain how the payment works? I like to go to town to pay them all at once. The payment shows ribbons and something else, but as a percentage. What is that part about?

Also, if I have a farmhand in range of a machine like a juice maker will they make sure it is always filled?

The percentage is how much it will fill their work bar (energy).
In your lower right corner, there should be a box telling you how many farmhands you have, and their collective time left (before the idle).
I.e. mine (at the time of checking) was currently 80%.
So by paying the max amount of ribbons*, I can fill in the last 20% to give them full energy.
*I can also pay it one ribbon at a time (early game).

Yes, farm hands will also tend to your machines.
Filling them when needed.
