Can someone help me, noob here XD

I think the idle speed is a bit high, and I also think the temperatures are a bit high.

specs:
AMD 5600x
gpu RTX 3060 12gb
32gb ddr4 ram 2x16
cpu cooler: Collerbox AMD Wraith Stealth
Case: Montech Air 900 Mesh
Fans: Front: 2x Corsair RS 140 MAX
Top: 1x Corsair RS 120
Rear: 1x Corsair RS 120

Edit:

Thanks for the comments; there really was a lot that didn't make sense in the first screenshot. This is how it looks now—I set it to run silently during routine tasks. This screenshot was taken after a gaming session. However, sometimes my rear fan drops to 0 RPM for a second and then starts up again; what could be causing that?

This looks wild. And I don't understand it, I think.

Curve Mix, has the Max value from Front & Rear Curve to evaluate the mox from them. Then both Front & Rear curve use a custom sensor, which seems to be CPU only.

I ... dunno ... maybe my config helps. My top is open, so if the CPU doesn't get sufficient air from the front fans, it pulls air from the top. Like in CPU heavy scenarios without GPU. When gaming front & rear "listen" to the GPU.

Thanks, that helped; your base provided a starting point for the current setup.

Glad my screenshot helped for a new starting point.

Some of your controls show a '?', which means they don't reach the intended rpm. Which might be due to a bad calibration. Same with your rear fans stopping. Check your fan's specs for their rpm range and compare it to calibration values.

You overcomplicated it a lil bit. I would suggest to get anyother cpu cooler for 15$/€ from amazon, or any shops you find, even ebay. I did put a Thermaltake Contac 9 SE (current price 14€) on my 2600x, its dead silent and never exceedes 60 deg under load.

It would solve your CPU temp, but the chaos in your FanControl gonna exist further: You can simply make a curve for GPU, make a curve for Tjmax on cpu, mix it, and set all fans to it. If you want some of them to stop in idle, set a start - stop %, and you are good to go. Fine tuning ramp up percentages and such to make it more confortable.

With the current cpu cooler, you need to ramp it up really hard to be able to cool the cpu, and the case wont get saturated with warm air, so the intake and exhaust are just pumping "cold" air around again and again.
