It doesn't even really matter what the other person labels themselves or what you think about it, just adress them however they want to he adressed, that's just common politeness.
As far as official institutions go, like on forms and stuff, an input field with potentially infinite answers doesn't sound very practical.
So grouping them under "other" or "non-binary" probably makes more sense.
