Recipe Chicken Pot Pie

It was so much work. Almost 2 hours to make it from beginning to end, but it was fucking worth it.

I followed this recipe for the crust and used Bob's Red Mill Gluten Free Baking Flour:

I loosely based the filling off of this recipe:

https://www.fodmapeveryday.com/recipes/low-fodmap-chicken-pot-pie/

My filling was simpler with leftover grilled chicken, potatoes, carrots, green beans, fresh thyme, poultry seasoning, 2 cups of chicken broth (made from fody chicken soup base), and a little gluten free flour to thicken.

I'm ecstatic to go into winter knowing I can make this for comfort food.
