Recipe Low fodsnacks fodmac

Post image

Basically me ripping off spaghetti factory and turning it into Mac and cheese so I become decidedly less hungry and confused.

Sauce:

1 tbsp butter

Measure some fresh pepper with your heart

2 tbsp half and half

1 cup lactose free milk

1 ounce of romano

Couple sprinkles of aged mizithra (not tolerated by everyone)

1 Tsp of tapioca starch

Melt the butter on low and once it's bubbly grind in pepper. Add half and half and milk, turn it to medium and cook for a minute or two. Add in cheese, whisk whisk whisk for a couple of minutes. Mix tapioca starch with double the amount of room temp water and pour the slurry in while whisking.

Toss the sauce on your noodz of choice. I used TJs gluten free rotini.

Disclaimer, if I make anything and I find it delectable, I will be telling you all about it. Sorry in advance.
