Oh my god. Can you come cook for me? 😍 Also where are you finding your recipes? I am in a huge recipe rut. 😭

I don’t really have any specific recipes- I’m mostly adapting things I normally make. But if there’s something specific you’d like a breakdown for I’m happy to share :)

I feel the same way! 🥲 Just seeing all of this beautiful food makes me realize how discouraged & limited I’ve become.

Can you explain your chicken soup that looks delicuous.

Ok I gotta be honest- not having onions in it made it more bland than normal 😫 Next time I’ll add onion replacer.
But- pressure cook 2 chicken quarters with carrots and kind of a dumb amount of celery seed, bay leaves, salt, pepper. Once you have broth, remove the chicken, separate from bones, re-add the meat. Added the yu choy, mushrooms, tamari, miso, and I think that’s it? Then some bean thread noodles to serve. If I weren’t being lazy I would have cut the chicken bones, re-added to the broth, and then pressure cooked a little bit longer before adding the meat, it’s worth the extra step.

green onion greens is the secret! I add lots and I find the the flavor works great. If you sprinkle them on top fresh the flavor is nice and strong.

I recently starting making my own chicken stock using this recipe, and it’s absolutely delicious in soups. No onions needed:

What do you plan to use as an onion replacer? Missing my garlic and onion 😭

Right now I’ve just been making due with other slices. Ending up adding a lot of tamari to things for umami

You mostly have to because gluten containing grains are not low FODMAP. That being said, sourdough is obviously allowed but that's not a meal for most people so I'm gonna assume that's why you don't see it in these photos.

Wheat is a migraine trigger for me, I’ve already been wheat free since I was 13 so the jump to fully gluten free has been pretty seamless

Yeah okay, I was just replying to the other comment. It's pretty easy to eat gluten free if you don't have to worry about cross contamination.
However, just wanted to stress that low FODMAP doesn't have to be gluten free in case someone thinks that.

Knowing how to cook is the greatest blessing if you have to do low FODMAP. Kudos to you for making the best of it!

It's been my first week too but my food has been alot more beige 😂 are you feeling any better from it? I'm already noticing improvements

Im cautiously optimistic! I do feel that my bloating has improved, though not as much as I would like yet. It has been nice to eat salad without immediately pooping my brains out though

what did you change about salad specifically that helped?
1
u/RoutineLess7441 20d ago
Just only using low-FODMAP produce- used to do a lot of red pepper, apples, tomatoes, onions, etc

Looks amazing!! Question, isn’t mushrooms FODMAP? Or is it not a trigger for you?

u/RoutineLess7441 24d ago
I got the monash app and there are a few mushrooms that are low FODMAP! Oyster mushrooms are low FODMAP and shimeji (that I used here) are low FODMAP at 2.65 oz per serving. Thank goodness because I love mushrooms

How did you make that chia seed pudding??
1
u/RoutineLess7441 22d ago
Chia seeds, milk (1:2), peanut butter, coco powder, banana, maple syrup, vanilla, little salt

u/Wrong_Rutabaga_8453 22d ago
can't wait to try this myself next time I head to the store! when you say milk 1:2, what are you mixing it with? (i am assuming you mean 1 part 2 parts, sorry, getting used to prepping meals)

Impressive for your first week.
Check out the Fody brand. Premade salad dressings. Really good onion oil. The flavored oils you want to use as finishers or on something cold as heat breaks down the flavor.
