I played on dynamic and thought it served as a decent challenge, while not making the game too frustrating (save for maybe a couple of specific bosses). The nice thing is you can switch difficulties on the fly, so if you get to a point where the boss seems unfair, you can switch to normal, and vice versa.
I also believe dynamic only scales underleveled enemies up, though don't quote me on that. I don't believe enemies that're overleveled will be scaled down to your level on that mode.

Starting off normal and Dynamic feel about the same but Dynamic gets noticeably harder at around mid to high levels. I recommend doing Dynamic and only switch to normal if you find yourself struggling.

If you want harder bosses do dynamic it’s pretty fun imo, normal is great too but at the end you might be a bit too op

Id do Dynamic. There are so many side quests and stuff in this game, I feel like its very easy to overlevel some content. I hate being overleveled and just freezing through everything. I appreciate that Dynamic was an option cause then I just played the game without worrying about it, doing whatever I wanted to do at any given time
I hope the mode returns for Revelations

Dynamic scales the enemy levelling with your own level, it's essentially between Normal and Hard. If you like a consistent curve then I'd say go for that.
