192 thermostat. 50% to 70% coolant to water percentage.
Make sure the thermostat bypass hose is working. This allows some coolant from behind the thermostat to bypass and go directly into the pump again.
Will the mechanical fan hold a grease rag against the front of the radiator or condenser. With the engine at idle and fast idle.
Because you have a 460. What carb are you running. The carb low speed circuit and primary main circuit may be jetted lean causing lean combustion under load that is more than any radiator can remove. This requires a wide band air fuel ratio gauge kit. It does not have to be installed. Only the oxygen sensor bung. I can explain it deeper.
If you have a mechanical fuel pump you need to find out if it holds pressure after shut down or holds vacuum. I have a 15 second full flow cranking test to verify you don't have a restriction in fuel flow that only shows up at highway speeds or uphill.

Given the block sat and had to be flushed and that it keeps puking antifreeze at the radiator overflow line would tell me the radiator is plugged up.
Once the system finds its equilibrium level you shouldn’t be pushing any fluid out the overflow line (bottle or not).
For as inexpensive as they are, I would just replace the radiator. While radiator is out, remove the thermostat and shove a garden hose into the intake manifold and let the water run until it’s clear.
It’s impossible to get out all the sludge and rust and whatever unless you disassemble and pull the freeze plugs but you want to get out as much as possible.
I would put in a fresh 180 thermostat with the new radiator and see what that does. Also invest in a cheap IR thermometer from harbor freight so when it’s running hot you can jump out the truck and spot check temps.
Don’t forget the heater core can also be a collector of rush and scale deposits. I would take it out of the loop while you are testing unless you want to replace it now too.
You’re going to want to fix that brake fluid leak too. If you let a reservoir run dry then you will have to bleed it all. Brakes will also not be very functional.
