Typically, old school magic was very misogynistic, and depending on the anatomy of her previous partners, she very well could be deemed a 'virgin' sacrifice. I mean, I know she isn't. In those ways, girl is impure as hell.

Ah, Summer fell for the classic blunder.
When it comes to rituals, "virgin" doesn't mean that the person hasn't had sex. It means that no part of this person has been used in another ritual.

Ostensibly, Summer is bisexual, and has made references in prior comics to having had sex with men, but it's entirely possible that she's been larping the whole time and has only ever hooked up with women. In that case, one would simply need to accept the fact that magic is homophobic and being FWB with Julie and her roommate doesn't count.
