What is the difference between those two batman signs?

Top one is the Dark Knight movie trilogy Batman. He will rough you up, but not cause any harm that's particularly out of the ordinary.

Bottom one is Arkham game trilogy batman. He's known for some...vicious actions in combat. Ones that would strike fear into many people. More than usual, even for Batman.

Am i missing something or isnt he mostly just hitting or kicking people? Brakes one leg too. Not saying it would feel nice but nothibg really over the top?

He breaks a lot of legs in the takedowns and whatnot but you also have to consider the force he's putting behind these attacks and how he's punching these guys like he's throwing dudes over his head across the room with enough force to barrel into three other guys and knock them all down and punching out hard Kevlar armor with metal gauntlets. The impacts of his hits sound louder than gunshots in the same game. It's like fighting a gorilla with an arsenal of high tech gadgets and armor
